Delivery or pickup date virtuemart

It is for a website where you can order a cake with your own photo or text. You can upload the photo and order the cake, so far so good. But here is the thing, when you order the cake you cannot pick it up (or have it delivered) the next day, it can only be after the day of tomorrow. The shop is also closed on sunday, so when you order a cake on friday you can only pick it up on monday. Third difficulty is when it is a holiday they don't deliver (but you can pick it up in one of the three stores), so that should also be posible to adjust.
The shop is allready working, uploading goes great, but what I need is somebody that can help me with the delivery dates I wrote about above. I think a sort of calender where I can select the days you can not pickup or have the cake delivered would be great. With allready build in you can only pick it up or have it send the next day (except sunday) would be awesome.
