Now, I know that title is not as “catchy” as it should be, especially if you’re not familiar with “adobo.” So what is “adobo?” It sounds pretty exotic, is it Mexican? Asian? And why is it pitting mothers against each other? For starters, adobo is sort of the national dish of the Philippines. It wasn’t officially dish in the olden times way back when the Spanish colonized the country, but a way of preserving meat due to the vinegar component of it. Now, it’s ubiquitous in the streets of Manila and almost every region in this country of 7,107 islands. Sounds interesting right? Now we’ll go the part where it your senses get teased So what are the ingredients of adobo? Here’s the thing, there is really no official recipe of the adobo. Every family has a different recipe (hence the saying, ‘My mom’s adobo is better than yours!’) But if we are to get the most essential, indispensible components of the dish, those would be chicken, pork (or chicken and pork), garlic, peppercorns, bay leaves, soy sauce and vinegar. The conventional way of cooking it is placing the pork and/or chicken in a pot and adding soy sauce until the meats are completely immersed.
