Change payment gateway wordpress template for a form

Hi
I need to susbstitute the payment gateway on a wordpress template (crowdfunding). Instead of having paypal, I need to have an online form with my own fields (it's more like a pre order). These fields also populate the backend for admin (like it is now with paypal, but with my own fields).
I need to be able to commit manually via admin, each new pre order so it reflects on the crowdfunding front end.
