"cases" setup in CiviCRM

We have a simple workflow for processing scientific consultancy projects for our customers. It looks like this could be done very effectively using the "cases" feature of CiviCRM, so we have set up a server running CiviCRM to evaluate this potential. We need someone to set up the "cases" system for us to follow our existing workflow, starting with an online form for customers to fill in to specify their needs, going through the generation of a quote, some progress steps as our staff work on the project, and then the generation of an invoice at the end.
