I am looking for someone to create a system that automatically sends POST requests triggered by the reception of emails from a specific email, to an HTTP interface.
I don't have a preferred language in mind for the program. Short, I need a program that reads an email received, gets the important info and modifies it/add info in need according to my needs and sends it to an HTTP interface in the form of a POST request.
Details:
The ultimate aim of the project is to send betting picks from email to the [login to view URL] website.
[login to view URL] offers the following http GET/POST endpoints to facilitate communication with the pick processing and distribution system:

The email is my own email and i receive the info in a format with text and images but the information I want to extract is all in text:

Program Specifications:
1. I would like to have a program that runs 24 hours a day on my home pc or VPS and is triggered when an email from a specific source gets in the inbox. Reads Text, Modifies, add info and send it as a POST request to POST [login to view URL] in the format they need to process it, which is:

Parameters
key: The API key used for authentication. This must be any active Bot ID that belongs to the owner of the source that the pick is being submitted to.
sport: The sport associated with the pick.
event: The event related to the pick.
bet: The pick's bet string.
odds: The pick's odds in decimal format.
stake: The stake for the pick in [login to view URL]'s 1-10 units scale.
book: The bookmaker (e.g., "PINNACLE", "BET365").
source: The [login to view URL] source that the pick is submitted to.
Notes:
- On line 3 ("sport": "Football",) i always want "Football" to appear there because i'm not getting this info from the received email.
- On line 4 ("event": "SARMIENTO - VELEZ SARSFIELD",) i'm changing the V for an hifen in between the names of the teams and also puting all the text in Caps Lock.
- On line 5 ("bet": "HT VELEZ SARSFIELD OVER 0.5",) has you can see i'm extracting only part of the information and in some cases i might modify it (1st half was changed to HT)
- Lines 8, 9 and 10 are added because they aren't also in the received email.
2. I can download and install Python or whatever programming language files are needed if required.
3. If possible, I would like to be able to see the code of how it is done if possible. For example, if it is done with Python, I would like to see what the professional way to do it was.

Alternatively there are two other ways we can do this if its less costly and works on the same principle:
1. Instead of submitting picks by Post request we can do it by email:

2. Instead of scraping the email received we can scrape the website that generates the info I want to collect automatically.
