Shopify: Design a home page and product page template and upload templates to my newly created Shopify site.

We are in the process of converting our website to the Shopify platform. I would need a few modifications made to a template. Our customer base is older and we are only looking for a simple design. We would like the template to be similar to our current site layout.
We haven't purchased the template yet. Here is what is needed for this project:
#1: Modify an existing Shopify template that will allow us to place additional description under the product image and link. We are not interested in any parallax type of design.
#2: Modify an existing template to add a left navigation to the product page.
#3: Upload the modified template the site and ensure it works.
#4: Template must be designed to ensure is doesn't break when/if Shopify upgrades its servers, etc.
