I've configured nginx and apache a bunch. This is a simple task for either. But just thinking, you'd be just as well off installing 2 apache servers. That way it would be easy to balance the load by transfering virtual hosts from the busier one to the more idle one. Moving things from apache to nginx is a little harder.
