I can help you with this video tour project. I do 3d modelling, animation, materials, lightning and rendering in blender. Using Cycles to for the rendering. The workflow could start by bulding the model from the floor plans, add the gym equipment, osbtacles, warped walls, etc. then materials and lightning and finally rendering. it would be important to know the final format and size for the video file to calculate the rendering time.
